Renowned for its passionate staff and thoughtful service, The Red Carnation Hotel Collection is to open a hotel in Scotland for the first time, with the aim of making it the number one hotel in Edinburgh. We plan to respectfully renovate 100 Princes Street, in front of Edinburgh Castle, transforming it into a highly exclusive retreat on Edinburgh’s most famous street.
With uninterrupted views of Edinburgh Castle, 100 Princes Street will replicate the boutique atmosphere of sister hotel 41, the most-loved hotel in London and TripAdvisor’s number one hotel in the English capital for over 10 years.
With meticulous care and attention to the listed building’s interior, we will embrace its history and heritage, using the finest local artisans and suppliers. 100 Princes Street will reopen in 2022 as Red Carnation Hotels’ 19th property worldwide, with 30 exceptional bedrooms and an Executive Lounge overlooking the Castle.
Since the Tollman family purchased Bouchard Finlayson in 2000, Victoria has worked in partnership with Peter Finlayson to ensure the ongoing growth and success of Bouchard Finlayson as an estate, and a global boutique wine brand. Based in London, Victoria’s talents are focused on operations, sales, marketing and public relations. She perfectly emulates her mother Beatrice, the celebrated founder of The Red Carnation Hotel Collection.
Peter Finlayson founded Bouchard Finlayson in 1989, in partnership with acclaimed Burgundian winemaker Paul Bouchard. His dedication to crafting unique wines expressive of the Hemel-en-Aarde has seen Bouchard Finlayson earn a reputation as one of South Africa’s most acclaimed wine estates. Peter pioneered the growth of Pinot Noir in South Africa, and was also responsible for introducing the Italian cultivars Sangiovese and Nebbiolo into South African vineyards.
Chris Albrecht is passionate about expressing the remarkable terroir of the Hemel-en-Aarde. A graduate of Stellenbosch University, where he qualified with a degree in Oenology and Viticulture, his practical experience and dynamic detail-oriented approach has taken him across the world of wine, from the New to the Old, working harvests in California, France, South Africa and New Zealand. Chris joined Bouchard Finlayson as assistant-winemaker in 2010, and was promoted to winemaker in 2017.
Wayne leads the Bouchard Finlayson team with his energetic proactive approach and finely honed financial acumen. Wayne is responsible for overseeing all facets of the daily management with meticulous planning, reporting and attention to detail ensuring the smooth functioning, and future success, of this respected working farm. A key aspect of his role is ensuring the premium wines of Bouchard Finlayson are seamlessly distributed into diverse channels both within southern Africa and abroad.
Lizette heads up wine sales for Bouchard Finlayson. A loyal and dedicated member of our team, Lizette’s key responsibility is ensuring the smooth operation of all logistics from the winery to our various export markets. This includes our involvement with ‘Wines of the World’, while local sales calls across the industry ensure a close relationship with our national customers. Her caring and compassionate approach is an inspiration to her team.
Danél is responsible for co-ordinating group tastings, pre-booked wine tours as well as our unique vintage tastings. Caring and helpful, she also takes charge of organising large events on the farm, from group lunches to music and poetry evenings hosted in the cellar of the estate’s Homestead. Danél is a valuable resource for the wine industry, keeping the trade informed of Bouchard Finlayson’s latest releases, and ensuring that visitors to the farm leave enchanted with our remarkable wines.
With many years of experience in the hospitality and events industry, and as a lifestyle photographer, Johann’s core focus has been assisting both people and brands with the process of image perception, and ensuring their creative vision is brought to life. Having moved from Stellenbosch to the Overberg to join the Bouchard Finlayson ‘family’, he is thrilled to enjoy the privilege of uniting passion and career in sharing the remarkable story of Bouchard Finlayson.
Ensuring our paperwork is in order, Bouchard Finlayson’s Administration & Accounts Assistant provides valuable support in finance and back-office organisation. When the estate is particularly busy you’ll also find Maggie in the tasting room, introducing guests to the wonderful wines of Bouchard Finlayson.

Bouchard Finlayson’s Stock Controller attends to the receipt and dispatch of stock, manages our stock volumes at various warehouses, and ensures that all stock figures are accurate and correct.
