bbar BBQ short beef ribs

A staple on the menu at bbar, our sister bar and restaurant here on Buckingham Palace Road, our BBQ Beef Short Ribs are a comforting staple for the upcoming colder weather.

Ingredients

For two portion of ribs

For the ribs:

• 1 kilo of BBQ beef short ribs
• 2 garlic cloves
• Sprig of thyme
• 2 bay leaves
• 2 pieces of cardamom
• Whole white pepper 
• 3 star anise 

For the vegetable stock:

• Celery
• Leeks
• Carrots
• Bay leaves
• Thyme
• Water

BBQ Sauce:

• 2 garlic cloves
• 2 red chilli’s
• ½ teaspoon of ginger
• 250ml tomato ketchup 
• 125ml soy sauce 
• 70ml white wine vinegar 
• 100ml golden syrup 
• 125ml orange juice
• 75g brown sugar
• 70ml water 

Method:

1. For the vegetable stock, cook celery, leeks, carrots, bay leaves, thyme at a reduced heat.
2. Slow cook ribs for 5 hours in a roasting tray with garlic, thyme, bay leaves, cardamom, pepper, star anise and your vegetable stock.
3. For the BBQ sauce, add the ingredients and cook at reduced heat for 45 minutes. Leave to cool. 
4. Once the ribs are cooked, add the BBQ sauce and finish in the oven for 10 minutes.
5. Serve with sweet potato fries and corn on the cob, or your choice of sides.
