We have identified 72 single use plastics used within the operations of the hotel, and are committed to eliminating all of them. Most notable of the recent removals include our welcome guest turn down amenities, which are now completely plastic-free from Floris.
Food waste at The Chesterfield Mayfair is an incredibly important issue, and our team are creating innovative solutions to reduce and re-work edible food waste that would otherwise be thrown away. All coffee grinds and raw fruit and vegetable trimmings are now being converted into compost via Winnow, a food waste solution technology. Powered by artificial intelligence, Winnow identifies and measures food waste - producing guidance to enable our chefs to make necessary changes in their production.
The system also shows the value of waste visually in terms of money and environmental impacts. This is a huge motivator for our kitchen team who are working tirelessly to reduce food waste by 50% by 2025.
All of our meat is sourced from Aubrey Allen, a local and organic supplier that also holds a royal warrant to provides meat to the royal households. H Forman smoked salmon is served as one of our most popular starters with traditional accompaniments, and also in our smoked salmon sandwiches for Afternoon Tea.
We have three sustainable experiences here at The Chesterfield Mayfair, that inspire positive environmental change.
